Clearly the alligator you had was not properly prepared. While it is not my favorite Cajun mystery meat, the bits I have had have been pretty tasty and less chewy than calamari.
The next time you're up here, we'll take you to a Cajun restaurant near the bookshop. Anthony makes a mean fried alligator that will change your mind. But it's got to be from the tail. Any other part of the 'gator is just, well, gristle.
