You know when you get a piece of gristle in steak and you discretely spit it into your napkin?

Yeah, that's what alligator tastes like.

Clearly the alligator you had was not properly prepared. While it is not my favorite Cajun mystery meat, the bits I have had have been pretty tasty and less chewy than calamari.

The next time you're up here, we'll take you to a Cajun restaurant near the bookshop. Anthony makes a mean fried alligator that will change your mind.

But it's got to be from the tail. Any other part of the 'gator is just, well, gristle.
